1 ½ cups light brown sugar

4 ¼ cups whole milk
1 pinch salt

4eggs (3 beaten)
1 1/2 cups white sugar
10 slices of bread, toasted and cut into cubes
1 cup raisins

Method
Preheat the oven to 190 degree Celsius.

Grease a baking dish and keep it aside. Whisk together white sugar, 3 eggs, 2 tablespoons of brown sugar, 3 cups of milk, ½ teaspoon cinnamon and ¼ cup of butter. Add the bread and the raisins to this mix. Transfer this to the baking dish and bake for 45-55 minutes or until the middle is set. Cover the pudding with foil 30 minutes into the baking process in order to avoid excessive browning. Wait for at least 10-15 minutes before serving.

For the vanilla sauce, combine the flour, 1 egg, 2 tablespoons of melted butter, a pinch of ground cinnamon, 1 ¼ cups of milk and the salt. Whisk together until smooth. Put this into a heavy bottomed pan and heat on medium for about 10 to 12 minutes till the sauce is a thick consistency and coats the back of the spoon. Add the vanilla extract and stir well. Pour this sauce over the bread pudding and enjoy.

Ingredients
300ml milk
300ml light cream
4 eggs
1 cup sugar
1 teaspoon vanilla extract
¼ teaspoon salt
¼ teaspoon cinnamon powder
¼ cup raisins
5-6 slices of bread

Method
Preheat oven to 150 degrees Celsius. Arrange the bread in a baking dish and add the raisins and cinnamon powder over it. In a separate bowl mix the milk, cream, eggs, vanilla extract and salt using an electric mixer with the speed set on high. The egg mix should be smooth. Pour this over the bread.

Take a large pan and fill it with hot water half the way. Place the baking dish into the pan, making sure that the water does not enter the baking dish. Place this in the oven and bake for about 90 minutes or until fully set.
