Two fun and tasty Jell-O and cream cheese recipes

Cream cheese and Jell-O desserts are the best way to combat the harsh summer days. These desserts are cool, refreshing and surprisingly easy to make. They can be enjoyed at barbecues, dinner parties, birthdays or any time you feel like indulging in a cool, fresh and light dessert.

1. Grape Jell-O and Cream Cheese Fluff

Ingredients
Grape Jell-O (or any other flavor of your liking) 1 packet
Cream Cheese, softened 120 grams
Water (boiling) 1 cup
Ice Cubes 2 cups

Method
In a mixing bowl, dissolve the Jell-O in the boiling water and keep stirring.

Add the ice cubes into the hot Jell-O and keep stirring till the Jell-O starts to thicken. Take out any ice cube that has not melted. In a separate bowl, beat the cream cheese until soft. Add about two tablespoons of the Jell-O to the cream cheese and beat till the Jell-O is blended into the cream cheese. Add this mixture to the rest of the Jell-O and beat on high till the mixture gains a foamlike texture. Pour into molds and chill till it sets completely.

2. Jell-o Cream Cheese Squares

Ingredients – for the crust
Flour 1 1/2 cup
Brown sugar 1/2 cup
Butter 1 1/2 sticks (150 grams)
Chopped nuts of your choice (Walnuts taste the best) 1 cup

Ingredients – for filling
Small package of Raspberry Jell-O
Hot water 1 cup
Heavy cream 2 cups
Cream cheese 1 package
Sugar 3/4 cup
For Topping
Lime Jell-O 1 large package
Hot water 3 cups

Method
Preheat the oven to 190 degrees Celsius. Grease a baking dish and set aside. Blend the butter and sugar together to form a creamy consistency. Add in the flour and nuts and combine well. Press the dough into the baking dish and bake for 10-12 minutes.
Whip the cream on high till it forms peaks and set aside. Dissolve the raspberry Jell-O into 1 cup of hot water and allow it to cool. Blend the cream cheese and sugar together until smooth. Add the whipped cream to this mixture. Once the Jell-O has cooled, add it into the cheese mix and pour this into the baked and cooled crust. Refrigerate until the filling sets completely.
For the topping, dissolve the Lime Jell-O completely into the hot water and let this cool. Pour it over the set cream cheese pudding and refrigerate till this layer sets as well. Enjoy.
